If it’s Friday night, it needs to be a cocktail – and this is a doozy. This is a Clover Club, first made for me by a bartender in London who made me write down the recipe (what a lovely lady!).

Ingredients (enough for 2, because no one wants to drink a cocktail alone!)
150ml gin
60ml freshly squeezed lime juice
60ml gomme / sugar syrup
12 fresh raspberries or a good slug of raspberry puree
Method
- Tip all of the ingredients into a cocktail shaker half filled with ice.
- Pop the lid on, wrap a tea-towel around the shaker, aaaaaand…..
- Shake for a good 30 seconds.
- Strain into cocktail glasses of your choice.
- Yummo.
