Smoked mackerel pâté

So easy to whip up, I sometimes wonder why I don’t always have some of this in the fridge, ready to be eaten for lunch or as a dip. Not so much a recipe as a reminder of what to throw into a food processor. A recipeminder if you will – which is basically the purpose of this whole blog! As you can see from the photo The Dog is rather interested in this one, can’t say I blame her.

Ingredients

4 smoked mackerel fillets (about 300g ish)

100g cream cheese

Juice of 1 lemon

2 tsp horseradish sauce

A good grinding of black pepper

Small handful of chopped parsley

Method

  1. Take the skin off the fish fillets, break them into pieces, then pop into a food processor with the rest of the ingredients, holding back a little bit of the parsley.
  2. Pulse until fairly smooth.
  3. Serve with the extra parsley.
  4. That’s it!
