Russian Spring Punch

This is a recipe from a cocktail-making-food-loving old friend who I’ve known for almost 25 years – what he doesn’t know about both probably isn’t worth knowing, and this is the drink he’s been quaffing on our regular Friday night lockdown zoom parties. It’s gooooooood, and certainly gets the weekend started on the right track!

Ingredients

Definitely enough for 2 people:

3 shots vodka

0.25 tsp vanilla extract (or use vanilla vodka)

1/2 shot Chambord

1/2 shot Creme de Cassis (or more Chambord)

1.5 shots lemon juice

1 shot sugar syrup

A handful of raspberries

Your choice of fizz

Method

  1. Fling all of the ingredients (bar the fizz) into a cocktail shaker with plenty of ice and shake hard for a good 30 seconds. A shot is generally 25 or 30ml depending on your particular measuring device.
  2. Strain into a jug so that you have a smooth mix.
  3. Pour into your glass of choice and top up with fizz – you’re aiming for 1/5 mix and 4/5 fizz.
  4. Aaaaaannnd relax. Or, as my friend put it when he sent the recipe ‘ Drink loads and forget all of your troubles 🥴’
