Frozen Watermelon Margarita

AKA summer in a glass, good times guaranteed! You need a blender for this one, and also (the hardest bit for me) remember to chop up the watermelon and pop it in the freezer a good 4 hours or so ahead of when you want the party to start – then it’s easy peasy and utterly delicious. Quantities below are for 2.

Ingredients – makes 2

400g watermelon

A small pile of free flowing salt

120ml tequila

60ml Cointreau

30ml fresh lime juice

15ml sugar syrup (see note)

Method

  1. Chop up the watermelon flesh and put it in the freezer overnight or for at least 4 hours.
  2. Just before moving onto step three, gather your ingredients together, squeeze your lime(s), then tip a little pile of salt onto a saucer. Gently rub one of the squeezed lime halves around the rim of your chosen glass, then dip the glass into the salt (this is optional, I love it, The Husband hates it).
  3. Fling everything else into your blender, and whizz up until smooth.
  4. Pour into glasses and sip away!

Note: Making sugar syrup couldn’t be easier – just pop half a cup of water and 1 cup of caster sugar into a pan and heat until the sugar has completely dissolved. Allow to cool, pop it in a clean jam jar and it’ll keep for absolutely ages.
