AKA summer in a glass, good times guaranteed! You need a blender for this one, and also (the hardest bit for me) remember to chop up the watermelon and pop it in the freezer a good 4 hours or so ahead of when you want the party to start – then it’s easy peasy and utterly delicious. Quantities below are for 2.

Ingredients – makes 2
400g watermelon
A small pile of free flowing salt
120ml tequila
60ml Cointreau
30ml fresh lime juice
15ml sugar syrup (see note)
Method
- Chop up the watermelon flesh and put it in the freezer overnight or for at least 4 hours.
- Just before moving onto step three, gather your ingredients together, squeeze your lime(s), then tip a little pile of salt onto a saucer. Gently rub one of the squeezed lime halves around the rim of your chosen glass, then dip the glass into the salt (this is optional, I love it, The Husband hates it).
- Fling everything else into your blender, and whizz up until smooth.
- Pour into glasses and sip away!
Note: Making sugar syrup couldn’t be easier – just pop half a cup of water and 1 cup of caster sugar into a pan and heat until the sugar has completely dissolved. Allow to cool, pop it in a clean jam jar and it’ll keep for absolutely ages.
